The fight is a trial by combat between Ser Vardis, the champion of Lady Arryn and Bronn, the defender of Tyrion Lannister (the dwarf). The champion is heavily armoured, fights by the rules and is an "honourable" man.
Bronn is a sneaky bastard who uses only a sword and no shield, dodges out the way 90% of the time, throws furniture and bystanders at his opponent and most importantly, waits for him to tire before striking the death blow.
Especially love Bronn's response when accused of not fighting with honour.
